blended pistachios
2 cups of roasted, shelled pistachio nuts
2 tablespoons maple syrup
A pinch of sea salt
1-3 tablespoons coconut oil (optional)




Place 2 cups of pistachios and a pinch of sea salt in a small food processor. Process on high, pulsating and stopping to scrape the sides if needed.  The pistachios will release their natural oils in 4-5 minutes. If more moisture is needed, add 1 to 3 tablespoons of coconut oil. Once the pistachios are smooth add in maple syrup to taste and continue blending for another 2-3 minutes until smooth.
